In this two-day class you will learn about the preparation of two 100% plant based Indian dishes: Masala-filled Dosa Wraps and Pakoras, plus delicious chutneys and sauces. Bring Indian flavor to your cooking repertoire with these easy to make dishes. This class is for cooks at any skill level who would like to try their hand making this famous Southern Indian tasting menu at home.

On the first day watch as Katalin Gyorgy, a local island chef, shows you secrets she has learned in order to make the right consistency of batter for dosas [thin, appropriately spiced, crispy crêpe-like food made from ground rice and urdahl lentils]. This batter will rest overnight, and you will learn the cooking techniques for the perfect dosa during the second session.  You will help her make Pakoras, a snack similar to fritters, and Cilantro Chutney and Tamarind Chutney. Then you will get to eat what you just made!

On day two Kat will first demonstrate making the classic Masala dosa filling that is a savory, gently spiced, and delectable filling consisting of mashed potatoes, onions, and spices. The smell will be incredible! 

Kat will also show the class how to make the perfect third condiment: cashew cream.  Finally you will, with Kat’s help, cook your own dosa, fill it with the Masala and enjoy eating them with the two chutneys and Cashew Cream! Bhojan Kaa Aanand Lijiye {enjoy your meal, in Hindi]

The ingredients are 100% plant based, use gluten-free ingredients and are non-dairy.  

Skill level: all levels

Please wear closed-toe shoes to class.

Instructor:   Katalin Gyorgy
Kat is a Hungarian born renaissance woman.  Maybe you have seen her at the Bainbridge Farmers Market [look for the GypsyKat stand] or taken one of her yoga classes.  She learned the art of cooking form her Hungarian grandmother at an early age. Her interest in food grew as she did and traveling the world.  Her repertoire is broad and diverse.
