About
Explore the principles of Washoku, the ancient Japanese food traditions that make meal preparation fun as well as transformative for health. We will incorporate ideas of “Five Colors” and “Five Tastes” (a special emphasis placed on the use of red, yellow, blue /green, white and black) - and celebrate local “shun,” meaning seasonal ingredients at the peak of flavor and freshness.
We will make seasoned vinegar for some quick “amasu” (sweet vinegar) ginger pickles, then learn the secrets of perfect sushi rice. Let your inner-artist out as you roll the modern “makisushi” and press the Osaka-style “oshizushi” using a surprising tool. Sushi fillings can incorporate vegetables and raw fish. We will take our time, tasting as we go.

Project
You will leave class with enough sushi for that night’s dinner: 16 pieces of beautifully decorated pressed sushi and 16 pieces of rolled sushi. You’ll also get Washoku-ish wisdom, new sushi skills and printed recipes, and a bamboo rolling mat.
