Clafoutis...What is it and where can i get some?  Karen Chaussabel will lead the discussion and how to make and will talk about her French upbringing and how to make the incredible Clafoutis

Clafoutis ( pronounced “klafuti”) is a baked French dessert consisting of fruit, traditionally cherries, covered by a thick crepe-like batter.  The dish's name comes from the Occitan clafotís, from the verb clafir, meaning "to fill" (implied: "the batter with cherries”).  In this class, you will make a clafoutis and also learn how you can use the batter as a base canvas to create other fruit and flavor combinations. Dairy-free option available upon request.


Karen Chaussabel was brought up  in the countryside in France and it meant that she grew up on the tastes of meals prepared from the produce from her parents’ garden, grandparents farm, artisans and foraged wild foods. She has kept her French roots close at hand since moving to the US, favoring home made food, preparing meals around what is fresh, seasonal and flavorful. For her it all starts with an ingredient, a vegetable, a fruit, then she choose a canvas/recipe to create a dish around it. It is an approach Karen is familiar with as an artist: let the materials be the guides! She finds that cooking is part of her art, and a daily practice in creativity!
